Georges Blanc (1933- ) is a two star Michelin chef, Commander of the Legion of Honour, and recipient of four toques from Gault et Millau. Catherine Brandel (1943-1999) was chef at Chez Panisse and an instructor and developer of the Culinary Institute of America at Greystone. Brandel worked in the Great Chefs series at the Robert Mondavi Winery, alongside culinary giants including Alain Chapel and Jean Troisgros, and was later to become a significant champion of sustainable agriculture and local foods, earning the title of first "forager" at Chez Panisse. Laid-in is a slip of printed note paper, titled "Catherine Brandel" with a handwritten recipe for Blackberry Mousse.
