A promotional cookbook, with a selection of recipe for dishes served in the dining cars, cafe cars, and steamer restaurants of the Southern Pacific Railroad. "Each recipe has been tested by Paul Riess, internationally famous supervising chef of the Southern Pacific Commissary Department". With a small but charming photographic portrait of the chef at work. Some light soil, otherwise near fine in illustrated wrapper. Scarce.
