Second edition, revised and enlarged; the first edition was issued in 1946. This French Canadian cookbook is focused on nutrition and ingredients, and is roughly divided into two parts, the first on foodstuffs, and the second on menus and cooking. The author, Marie de Sainte-Thérèse de Jésus, was born Alma-Angeline-Eugenie Bolduc, and spent much of her early life in Haverhill Massachusetts. She became a teacher o household science and cooking, with a focus on nutrition. Textblock exhibits some fading, apparently from the printing itself, not from exposure to the elements. Wrappers are printed in red and green, with photographic reproductions of images of three meals. Generally very good. Scarce.
