His concern here is the moment when the aesthetic concerns of gastronomy must take a back seat to addressing hunger. The recipes supplied seem, to this cataloguer, ill-fitted to such a purpose, and include Cassoulet aux Cerises, Filet Grand Veneur, and Pigeons en Cocotte, to name but a few.
